Mustard greens and maize bread is a popular Punjabi recipe, which is liked by people not only in Punjab but across the country.
Ingredients for making mustard greens and maize bread
essentials for Saag
-750 grams mustard greens
-250 grams spinach greens
-250 grams of greens
-2 cups of water
-A pinch of salt
-1 1/2 cups maize flour
-4 green chillies
-25 grams of ginger
-6 garlic clove
-2 onions
-Ghee
-1/2 tsp red chilli powder
-1/2 tsp garam masala
-1/2 tsp coriander powder
How to make mustard greens
To make mustard greens, first put all three greens in a pressure cooker, add salt and water, and cook on low flame for 1 1/2 hours. Now
Squeeze the water of saag and keep its water aside. Mash the greens thoroughly in the cooker. Now add maize flour to it and mix it in the greens.
After this, add normal freshwater with greens in the cooker and cook it on low heat. Add green chilli and ginger to the greens and cook until the greens thicken.
Sarson Ka Saag
To prepare to temper for greens, add onion, ginger, garlic, red chilli, garam masala, coriander and fry it.
Take care to fry the onions till they turn golden brown. Now put the tempering in the greens and mix it. Now serve juniper chopped ginger for garnishing with the hot greens maize bread.
Maize bread
-1/2 kg maize flour
-Water for dough
- Ghee to dry
Method of making maize bread-
To make maize bread, firstly take maize flour and knead it like flour. Now heat the griddle and put some ghee on it so that the roti does not stick to the griddle.
Now prepare round maize bread on the chakla and put it comfortably on the pan.
Apply ghee on the roti and roast till it becomes golden brown. Serve the maize bread with mustard greens, jaggery and white butter.
